Sofia's Spices

Black beans

Ingredients 

  • 4 cans of black beans not drained
  • 8 oz tomato sauce
  • 2 long leaves of culantro/recao (If you can’t find it in stores add a more of cilantro)
  • 4 sprigs of cilantro leaves chopped
  • 1 bay leaf
  • 1 tbsp of minced garlic
  • 1 tbsp of white vinegar
  • 1 tbsp of olive oil
  • 1 potato chopped in 1/2-inch cubes
  • Small piece of pork or 1 piece of bacon
  • 1 or 2 cubes of Sofia’s Spices Sofrito (I use 2)
  • 2 tbsp green olives with pimentos pitted
  • 1 tbsp of Spanish capers
  • 3 tbsp of Sofia’s Spices Adobo with salt
  • 2 tbsp of Sofia’s Spices Sazon

Directions

  1. On medium heat place a medium-sized pot and add everything except the beans. Let it simmer until fragrant—about 3 minutes.
  2. Add the beans with the juice, mix well, and lower the heat to simmer. 
  3. Continue to stir the beans frequently so they don’t stick to the bottom of the pot. cook for 20 minutes.
  4. You can enjoy this by itself or with some White rice.
